Roy's is a notable American restaurant chain that started out in Hawaii. The chain's specialty is blend of Hawaiian, Japanese and French. Chef Roy Yamaguchi, a graduate of Culinary Institute of America, was born in Japan and had grandparents who owned a tavern in Maui. Inspired by his grandparents' tavern and culinary training and also a James Beard Found Award winner, Yamaguchi opened up the first Roy's restaurant in 1988 in Honolulu, Hawaii. Today, there are 29 Roy's restaurants in total. 6 are in Hawaii, 21 in continental US, 1 in Guam and 1 in Japan. What makes unique about Roy's is that Roy's seafood are locally caught a lot of times as the restaurant emphasizes on freshness.
As one of the Hawaii Regional Cuisine movement founding members, Roy Yamaguchi started his first restaurant, North, in Los Angeles in 1984. In 1988, Yamaguchi moved to Hawaii and opened up the first Roy's and it received great recognition. The restaurant was considered to be a great place for oriental & American style food.
